Gingerbread Mini Houses

OMG! How cute are this little houses that sit on the rim of a mug!? I’m really in love with them!! They are made of the tradicional gingerbread cookie, but the dough is completely vegan and also don’t contain refined flours and sugars (the icing is another story…see the details below…).

I chose to use whole grain flour insted of white flour, coconut oil instead of butter and also flax eggs to replace the eggs. They are simply as delicious as the tradicional ones!!

Ingredients (makes about 20 houses)

Cookies

2 cups whole wheat flour
1/3 cup melted coconut oil
3/4 cup brown sugar
1 1/2 tablespoons ground ginger
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon vanilla extract
2 flax eggs
1/3 cup molasses
pinch salt

Icing

500 g powdered sugar
1/2 cup water
1 tablespoon lemon juice

Procedure:

1. Place flour in a mixing bowl.
2. To make the flax eggs add 2 tablespoons of ground flax to 1/4 cup of water. Stir well and let it set for a couple minutes.
3. In a small bowl put melted coconut oil and brown sugar. Mix well with a spatula or an electric mixer and then add spices, salt, flax eggs and molasses. Continue to mix to combine.
4. Slowly, add flour to the mixture and mix until a dough is formed.
5. Wrap the dough in plastic and refrigerate at least 1 hour to cool.
6. Preheat oven to 350ºF (170ºC).
7. Roll out dough on a lightly floured work surface. Cut out with a knife each single piece of the houses.

8. Place the pieces on a baking sheet lightly oiled and bake for about 8 minutes.
9. Let’s make the icing! Place sugar in a bowl and add the lemon juice and water. Beat until well combined. If it is too thick add more water and if it’s too liquid add more sugar.
10. To color the icing separate the mixture in two parts, and place them in two bowls. Add a few drops of food coloring of your choice (I picked pink) in one of the bowls. You can use natural coloring such as spirulina, turmeric or beet powder.
11. Start putting all the pieces together by using the icing as a glu. This process it’s a little bit tricky and may take you a little bit of practice. Be patient and don’t desperate. The icing needs some time to firm up, so let the houses set for a while before you start decorating them. First, I sticked together the walls and the front and back of the house and once it was firmely sticked, I added the roof.
13. Finally place your icings in a pastry bag and decorate the little houses however you want. Get creative! You can also add some sugary preety sprinkles like I did. Have fun with it!!! :)
